[sweet potato leek soup] fall means many things to me: crisp air, fall colors, raking leaves, sweaters, hot beverages, perhaps even some apple crisp - and as for me, it always means one thing for sure...soup! all kinds, and lots of it! it was sweet potato leek soup the other night and it was delightful (like a reunion with an old friend that was long overdue...) simple to make, hearty, delicious and healthy (so i'm told) if you're like me and soup sounds like the perfect way to officially welcome the change of seasons, then i'll gladly share my version of the soup and hope you're as blessed as i was...

‣saute one stick of butter and leeks until tender (chopped to create thin rings and rinsed well - leeks tend to get dirt down in the layers) - i use the portion of the leeks shown in the picture - cutting between the red lines
‣add 4-5 sweet potatoes (peeled and cubed) and fill with favorite stock (or water with bouillon) until covering the potatoes and allowing them to just begin to float
‣add salt, pepper, touch of curry, roasted garlic paste and bring to boil - continue to cook on medium-high heat until potatoes are tender
‣mash the potatoes to get a thick consistency (i prefer to leave some lumps) and add milk or half 'n half until light orange color (about one cup) - finish off with a swirl of sour cream (or better yet, creme fraiche)
